The Gatina washing station is located north in the Nyeri District. With deep, fertile soils rich in organic matter and a relatively cool climate with abundant and reliable rainfall, the area is known as the “grand cru” of Kenyan coffees.
After arriving at the washing station, cherry is sorted, and ripe and underripe cherry is processed separately. The overripes return home with the farmers, who home process them as M’buni - low grade, dried coffee. At the washing station, the processing is meticulous: pulping, fermentation and washing. Then, the coffee is soaked for up to 24 hours before it is dried on beds - tables with a mesh bottom to allow for air circulation. Spread out and in not too thick layers, the coffee is frequently turned by hand to dry evenly.
Deep, complex aromas of plum pudding and caramel. Syrupy sweet with flavours of stonefruit and wine gums.
